- 1 1/2 pounds of thinly sliced carrots 7 to 8 large carrots, peeled
- 2 cups of chopped onion
- Salt to taste
- 1 teaspoon of minced ginger
- 2 cups of chicken or vegetable stock
- 2 cups of water
- 3 large strips of orange zest
- Garnish with chives & parsley.
